Super Sexy Smoky Chicken Recipe For Your Lockdown Feast

I was looking for a new chicken recipe and this happened as a happy accident… The lockdown has it’s perks!

I found myself pretty bored of eating the same things pretty quickly into the lockdown… Anyone else?… I thought so… Not going out for dinner with friends saves plenty of money, without fresh ideas, food can get a little dull in the doldrums. I set out to experiment and came up with this yummy hot, sweet & smoky chicken recipe and wanted to share it with you.

This Hot, Sweet, Smoky Chicken Recipe Serves 2–3

Ingredients

400g evenly chopped chicken Generous

1tbsp Hot smoked paprika

Generous 1tsp Cinnamon

1 tsp Garlic powder

A sexy 1tbsp Parsley

1tbsp Coconut sugar

2tbsp Light Soy sauce

The Main Event

Preheat the non-stick pan on a high heat

  1. Fire in the chopped chicken in on it’s own; you may need a touch of cooking oil in there if you don’t have a non-stick pan — I do, so I didn’t use oil.
  2. Toss the chicken for the first 2–3 minute until it’s white on the outside
  3. Combine your dry ingredients to throw in first, coating the chicken — that’s your hot smoked paprika, the garlic powder, parsley and cinnamon (of course, if you want to be really good you could use fresh garlic and parsley — in that case: fire in the garlic andhold the parsley until the end).
  4. Coat the chicken with the spices for a couple of minutes, tossing as you go; then add the soy sauce and coconut sugar and give it some love. Making sure you evenly coat the chicken pieces.
  5. Reduce the heat to medium and keep tossing; sexy tosser.
  6. It should take 15–20 minutes to cook, always check to make sure your chicken is cooked right through.

Serving Option 1

Dry 50g Wholewheat Spaghetti 1tbsp Extra virgin olive oil 50g White medium Cheddar cheese grated 12 chopped cherry tomatoes

Let’s Go…

  1. Boil your water in the pan and chuck in the spaghetti, cooking to your taste (I’m a very slight a la dente)
  2. Drain the spaghetti, run under water to wash the excess spaghetti goo away
  3. Throw it lovingly back in the pan — off the heat mind; get tossing again, this time with that spaghetti and the olive oil, maybe adding some ground black pepper here if you wanna be .
  4. Chop your cherry toms in half and scatter those in the pan too, along with your grated cheese and chicken — TOSS IT until you’re happy.
  5. Then Slink that yummyness onto your nicely pre-warmed plate and enjoy with your juice of choice…

Or maybe a wee Chardonnay or Malbec maybe?

Serving Option 2

4 handfuls couscous/quinoa 1 Finely chopped peppers Spring Onions Chopped

  1. Follow the instructions on the pack to cook your quinoa or couscous
  2. Once cooked add stir in your chopped peppers and spring onions
  3. Top with the chicken and serve.
  4. I didn’t write this one with the same gusto, did I? Shame.
